Recent Celiac Diagnosis

So are you new to eating gluten free? Have you recently been diagnosed with Celiac's? Or are you just trying to become more healthy? If you answered yes to any of these questions than this blog is for you. I will post tried and true recipes along with monthly meal plans to get you eased into eating gluten free.

Well here is a little about my story.  I was feeling tired and run down.  I needed a nap everyday just to function and take care of my kids.  I had just had a baby so I thought maybe I was just "new mom" tired.  But even after he started sleeping through the night I was still completely exhausted! Finally at the urging of my sister I decided to go see a doctor.  I suspected I might have some thyroid issues so I just thought I would check.  Being the great doctor that he is my doc decided to run a celiac blood test as well.  I of course brushed this off.  There was NO way I celiacs! I had no symptoms, no one in my family had ever been diagnosed.  So I just brushed it off an moved on.  A few days later I get a call.  My doctor wants me to come in and meet with him to discuss my results.  At this point I knew whatever tests had been run the news wouldn't be great.  He sat me down and told me I had Hashimoto's Thyroiditis, which I sort of expected. We went over treatment and then he wanted to get to the rest of my results.  He then informed me that I had tested VERY positive for Celiac Disease. So positive in fact that he wanted me to go and get an endoscopy.  At this point I started to freak out a little.  I love food!  No I don't think you understand. I LOOOOVE food!!!! I had planned future vacations around the type of food we would eat and where we could go to eat.  My family held huge family gatherings all around food. Literally all my dreams and future plans were tied around food.  I felt completely blindsided and devastated.  I knew giving up gluten for life was going to be hard. Like REALLY hard! So being the Pinterest addict that I am I headed over to Pinterest and immediately started pinning recipes.  But you know what I found? It was really hard to find good meal plans that included things I liked and wanted to eat.  The meal plans that I did find wanted a fee to download. And I really did not want to spend any money for recipes that I might not even like.

Finally after hours and hours of scouring the Internet for decent gluten free meal ideas I decided to start a blog. My hope is that I have a way to document my monthly meal plans and in the future wont spend a ton of time testing out recipes I don't love. If I can help ease even one persons struggle with eating gluten free this blog will be totally worth it.
