Monthly Meal Plan (November)

Here are a few of the recipes I started out with. For me it was easier to start with some of my favorite recipes and just adapt them to be gluten free.  Some were naturally gluten free which is always a bonus! I felt like I needed to really ease myself in to the whole gluten less lifestyle. Most of these meals can be made in 30 minutes or less. These should have enough for leftovers some days which should get you pretty much until the end of the month.
*Based on a family of 2-4*

1. Stacked Chicken Enchiladas
2. Basil Pesto Chicken Pasta with Sun Dried Tomatoes
3. Vegetable Tian
4. Baked Denver Omelet
5. Roast Pork and Sweet Potatoes
6. Shepherds Pie (for this recipe I just use Gluten Free Gravy Mix mix, I like to use 2 packs. You should be able to find this at your local grocery store.)
7. Gluten Free Pizza: I like the Namaste Pizza Mix then I add my favorite marinara or pizza sauce,  shred some mozzarella and add turkey pepperoni and any other toppings I might want.
8. Fajitas:
      Chicken or beef.
      Taco Bell makes a gluten free packet you can use or just make this.
      Sliced onion
      2 Bell Peppers
      *Top with cheese and sour cream.
      Mission tortillas makes a good gluten free version or you can use corn tortillas depending on your taste.
9. Chicken Avocado Lime Soup: just be sure to use gluten free broth
10. Tomato Mozzarella Basil and Quinoa Salad
11. One Pan Chicken Sausage Apple and Sweet Potato Skillet
12. Wingers Salad (makes enough for 2 salads):
      2 Romaine Lettuce Heads
      1/2 C. Craisins
      2oz cheddar cheese cubed
      1/2 C. Celery Diced
      1 C. Cherry Tomatoes
      6oz Gluten Free chicken nuggets
      This Sauce
      GF Ranch Dressing
13. Turkey Sausage Pepper and Potato Hash
14. Tex Mex Chicken and Zucchini
15. Tacos: Just make sure to use GF taco seasoning or use this recipe
16. Beef Chili
17. Crock Pot Potato Soup

And I thought I should add some desserts for good measure ;) Don't be mad but these desserts are extremely addicting!
